Fluffy Waffles with Peanut Butter Drizzle

Ingredients (Base):

  • 1 cup all-purpose flour

  • 1 tbsp granulated sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1 cup milk

  • 1 large eggs

  • 2 tbsp melted butter or oil

  • 1/2 tsp vanilla extract

  • A splash of warm milk (to thin, if needed)


Ingredients (Topping):

  • 2 tbsp peanut butter

  • 1 tbsp honey or maple syrup

  • Fresh fruit (bananas, or berries), or sprinkle of granola


Instructions: 

  1. Preheat your waffle iron.

  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. In another bowl, whisk milk, the egg, melted butter, and vanilla extract.

  4. Pour wet ingredients into dry and mix until just combined (don't over-mix).

  5. Lightly grease waffle iron and cook waffles until golden and crisp.

  6. For the drizzle: microwave the peanut butter with honey/maple syrup for 15-20 seconds until smooth. Add a splash of milk if the batter is too thick.

  7. Drizzle the warm peanut butter mixture over waffles and top with fruit or granola.
