Turkish Eggs

Ingredients (Yogurt Base):

  • 1 cup plain Greek yogurt

  • 1 clove of garlic, minced or grated

  • Salt, to taste


Ingredients (Spiced Butter):

  • 2-3 tbsp butter

  • 1 tsp smoked paprika

  • A pinch of chilli flakes


Ingredients (Eggs & To Serve):

  • 4 fresh eggs

  • Fresh dill, chopped

  • Crusty bread or pita


Instructions: 

  1. In a bowl, combine Greek yogurt, minced garlic, and a pinch of salt. Mix well and let sit at room temperature.

  2. Bring a saucepan of water to a gentle simmer. Add eggs and remove after 6 minutes.

  3. In a small pan, melt butter over medium-heat. Add chilli flakes and a pinch of paprika and let it sizzle for 30 seconds - 1 minute, then remove from heat.

  4. Spread the garlicky yogurt on plates or shallow bowls.

  5. Gently place the poached eggs on top and drizzle the spiced butter over the eggs.

  6. Garnish with the fresh herb: dill. Serve with crusty bread or pita.
