Berry Awesome Blueberry Crumble

Ingredients (filling):

• 4 cups fresh or frozen blueberries

• 1/2 cup honey

• 1 tablespoon cornstarch

• 1 teaspoon lemon juice

• 1/2 teaspoon vanilla extract

• A pinch of salt


Ingredients (crumble topping):

• 1 cup rolled oats

• 3/4 cup all-purpose flour

• 1/2 cup brown sugar, packed

• 1/2 teaspoon ground cinnamon

• 1/4 teaspoon salt

• 1/2 cup unsalted butter (cold, cut into small cubes)

• handful of pumpkin seeds


Instructions:

1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish (or a similar size).

2. Make the filling: In a large mixing bowl, combine the blueberries, honey, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Toss to coat the blueberries evenly. Transfer the mixture to the prepared baking dish.

3. Prepare the crumble topping: In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Add the cold cubed butter. Use a pastry cutter, fork, or your hands to blend the butter into the dry ingredients until the mixture resembles coarse crumbs.

4. Assemble the crumble: Evenly sprinkle the crumble topping over the blueberry filling. Top with handful of pumpkin seeds.

5. Bake: Place the crumble in the oven and bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling.

6. Cool and serve: Allow the crumble to cool slightly before serving.
