Blackberry & Brie Grilled Sandwich

Ingredients (Sandwich):

  • 2 slices of sourdough

  • 2-3 oz of brie cheese, sliced

  • 1-2 tbsp olive oil

  • 2-3 tbsp of chia seed blackberry jam


Ingredients (Chia Blackberry Jam)

  • 1 cup of fresh of frozen blueberries

  • 1-2 tbsp of honey

  • 1 tbsp of chia seeds

  • 1 tsp of lemon


Instructions: 

  1. In a small saucepan over medium-heat, warm the blackberries until they begin to soften and burst (about 5-7 minutes).

  2. Mash them gently with a fork or spoon until you get thick, jammy texture.

  3. Stir in the maple syrup, chia seeds, and lemon juice. Cook for another 1-2 minutes, then remove from heat. Let the jam cool (it will thicken as it sits).

  4. Rub olive oil on one side of each slice of bread (this will be on the outside for grilling).

  5. Place brie cheese slices on side without olive oil, then spoon chia blackberry jam over the brie cheese.

  6. Top with the second slice of bread, olive oil side facing out.

  7. Heat a skilled or pan over medium-heat and grill the sandwich for 3-4 minutes per side, or until the bread is golden and the brie is melted.

  8. Remove from heat, slice in half, and serve warm.
