Chocolate Greek Yogurt Banana Bread

Ingredients: 

  • 4 ripe bananas 

  • ½ cup plain, whole milk Greek Yogurt (I used Liberte 10% yogurt)

  • ¼ cup unsalted butter 

  • ¼ cup maple syrup (or honey)

  • 2 eggs

  • 2 teaspoons vanilla extract 

  • 1 ½ cups all-purpose flour (or whole wheat pastry flour) 

  • 1 ½ teaspoons baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt 


Optional: 

  • 1 cup dark chocolate chunks 

  • ½ cup nuts (I like walnuts) 


Instructions: 

  1. Preheat the oven to 350 degrees F. Butter a 9x5 inch bread pan 

  2. In a bowl, stir together the mashed bananas, greek yogurt, butter, maple, eggs, and vanilla until combined. Add the flour, baking soda, cinnamon, and salt. Mix until combined, then fold in the chocolate chunks. 

  3. Pour the batter into the pan. Bake for 55 minutes, using a toothpick to determine if its done (insert the toothpick into the centre of the bread, if it comes out clean, it is ready to be removed). 

  4. Slice and enjoy!
