Cottage Cheese & Heirloom Tomato Toast

Ingredients:

  • 2 slices of sourdough

  • 1 cup of cottage cheese

  • 2 medium heirloom tomatoes, sliced

  • 1 tbsp olive oil

  • 1 tsp balsamic glaze (optional)

  • Salt to taste


Instructions: 

  1. Toast the bread until golden brown and crisp, either in a toaster or in a skillet with a little olive oil.

  2. Prepare the cottage cheese, stir in a little olive oil and salt for extra flavour.

  3. Spread a generous layer of cottage cheese onto each slice of toast.

  4. Arrange the heirloom tomato slices on top.

  5. Drizzle with olive oil (and balsamic glaze if using) and sprinkle with salt.
