Crispy Crust Cottage Cheese Pizza

Ingredients (Crust):
1 cup cottage cheese
1 egg
1/4 cup all purpose flour
Pinch of salt
1/4 tsp garlic powder (optional)
Ingredients (Toppings):
1 tomato, thinly sliced
1/4 red onion, thinly sliced
1 mozzarella ball, torn into pieces
Handful of fresh cilantro, chopped
Salt and pepper to taste
Instructions:
Preheat over to 400 degrees F, then line a baking sheet with parchment paper.
Make the crust in a blender, combining the cottage cheese, egg, flour, salt, and garlic powder. Blend until smooth and pour onto the lined baking sheet and spread into a circle or oval, about 1/4 inch thick.
Bake the crust for 12-15 minutes, or until golden and firm to the touch.
Top with tomato slices, red onion, and the mozzarella ball chunks.
Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Top with fresh cilantro!
