Crispy Smashed Potatoes with Fresh Tzatziki Sauce

Ingredients (Potatoes):

  • 1.5 lbs baby potatoes

  • 2 tsbp olive oil

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • Salt & pepper to taste


Ingredients (Tzatziki Sauce):

  • 1 cup plain Greek Yogurt

  • 1/2 cucumber, grated and squeezed to remove excess water

  • 1 tbsp lemon juice

  • 1 tbsp extra virgin olive oil

  • 1 tbsp chopped fresh dill

  • Salt to taste


Instructions (Potatoes):

  1. Add potatoes to a pot of water. Boil until fork-tender, about 15-20 minutes. Preheat oven to 425 degrees F.

  2. Drain and place boiled potatoes on a parchement-lined baking sheet. Use a glass to gently smash each one.

  3. Drizzle with olive oil, and sprinkle with garlic powder, oregano, salt, and pepper. Bake 25-30 minutes until golden and crispy.


Instructions (Tzatziki Sauce):

  1. In a bowl, combine all ingredients. Add salt, lemon, and garlic to taste.
