Crispy Smashed Potatoes with Fresh Tzatziki Sauce

Ingredients (Potatoes):
1.5 lbs baby potatoes
2 tsbp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt & pepper to taste
Ingredients (Tzatziki Sauce):
1 cup plain Greek Yogurt
1/2 cucumber, grated and squeezed to remove excess water
1 tbsp lemon juice
1 tbsp extra virgin olive oil
1 tbsp chopped fresh dill
Salt to taste
Instructions (Potatoes):
Add potatoes to a pot of water. Boil until fork-tender, about 15-20 minutes. Preheat oven to 425 degrees F.
Drain and place boiled potatoes on a parchement-lined baking sheet. Use a glass to gently smash each one.
Drizzle with olive oil, and sprinkle with garlic powder, oregano, salt, and pepper. Bake 25-30 minutes until golden and crispy.
Instructions (Tzatziki Sauce):
In a bowl, combine all ingredients. Add salt, lemon, and garlic to taste.
