Delicious Homemade Granola

Ingredients:

  • 2 cups rolled oats

  • 1 large ripe banana, mashed

  • 1 egg, whisked

  • 2 tbsp sunflower seeds

  • 1 tsp ground cinnamon

  • 1 tbsp honey or maple syrup (optional)

  • 1/4 tsp salt

  • 2 tbsp coconut oil (or any neutral oil)


Instructions:

  1. In a mixing bowl, combine the mashed banana, whisked egg, cinnamon, honey (if using), and salt. Mix until smooth.

  2. Stir in the rolled oats and sunflower seeds, ensuring everything is well coated.

  3. Heat the coconut oil in a large non-stick skillet over medium heat.

  4. Add the oat mixture to the skillet. Spread it out evenly and cook for 12-15 minutes, stirring every 2-3 minutes to prevent burning and ensure even browning.

  5. The granola will be golden and crispy when ready. Lower the heat if it browns too quickly.

  6. Spread the granola on a parchment-lined tray or plate to cool and crisp up further.
