Fluffy Strawberry Pancakes

Ingredients:
1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 cup milk
2 tbsp vegetable oil
1/2 tsp vanilla extract
1/4 cup fresh strawberries, finely chopped
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl or measuring cup, combine the beaten egg, milk, oil, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
Fold in the chopped strawberries evenly throughout the batter.
Heat a non-stick skillet or griddle over medium-heat and lightly grease with oil. Pour 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown and cooked through.
Serve warm with maple syrup, whipped cream, or extra strawberries.
