Green Goddess Couscous Bowl

Ingredients:

  • 1 cup pearl couscous, cooked and cooled

  • 1/2 cup feta cheese, crumbled

  • 1/2 cucumber, diced

  • 1–2 tomatoes, diced (or a handful of cherry tomatoes, halved)

  • 1 tbsp extra virgin olive oil

  • 1 tsp balsamic vinegar (or to taste)

  • Green Goddess seasoning (from Trader Joe’s), to taste

  • Salt, to taste (I like Celtic Sea Salt)


Instructions:

  1. Cook the pearl couscous according to package instructions. Let cool slightly.

  2. In a bowl, combine the cooked couscous, diced cucumber, tomato, and feta.

  3. Drizzle with olive oil and balsamic vinegar.

  4. Sprinkle with Green Goddess seasoning to taste.

  5. Toss gently to combine, and enjoy chilled or at room temperature!


Optional Add-Ons: Kalamata olives, chopped herbs (like parsley or basil), chickpeas, or grilled chicken for extra protein.
