Mediterranean Loaded Couscous & Falafel Plate

For the Couscous:
1 cup couscous
1 cup boiling water or broth
1 tbsp olive oil
Pinch of salt
For the Ground Beef:
400g (about 1 lb) ground beef
1 egg, whisked
1 tsp paprika
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil for cooking
For the Tzatziki:
1/2 cup Greek yogurt
1 tbsp olive oil
1/4 cup grated cucumber, excess liquid squeezed out
1/2 tsp garlic salt (or fresh garlic minced)
Pinch of salt
For the Dressing:
2 tbsp olive oil
Juice of 1/2 lemon
1/4 tsp salt
Extras:
1 cup grape tomatoes, halved
Instructions:
Place couscous in a heatproof bowl with olive oil and a pinch of salt. Pour boiling water or broth over it, cover, and let sit for 5 minutes. Fluff with a fork once done.
In a mixing bowl, combine ground beef with egg, paprika, cumin, garlic powder, salt, and black pepper. Heat olive oil in a skillet over medium heat. Add the seasoned beef mixture and cook, breaking it apart with a spatula, until browned and fully cooked (8-10 minutes).
In a bowl, mix Greek yogurt, olive oil, grated cucumber, garlic salt, and a pinch of salt until well combined. Set aside.
Serve a portion of couscous on each plate. Add a generous scoop of ground beef on top. Place halved grape tomatoes on the side. Drizzle the olive oil and lemon dressing over the tomatoes and couscous. Add a dollop of tzatziki on the side.
