Street Corn Smash Tacos

Ingredients:
1 lb ground beef
8 small flour tortillas
Salt & pepper, to taste
Butter, for greasing the pan
Ingredients (Street Corn Topping):
1 1/2 cups corn
1/4 cup mayonnaise
2 tbsp sour cream
Juice of 1 lime
1 clove garlic, finely minced
1-2 scallions, thinly sliced
1/4 cup chopped cilantro
1/4 cup feta cheese
1/2 tsp paprika
Ingredients (Sauce):
1/4 cup mayonnaise
2 tbsp sour cream
Juice of 1/4 lime
Instructions:
In a bowl, combine corn, mayo, sour cream, lime juice, garlic, scallions, cilantro, feta cheese, and paprika. Mix well and season with salt. Set aside or refrigerate.
Whisk mayo, sour cream, lime juice. Set aside.
Divide ground beef into 8 equal portions and roll into loose balls. Season lightly with salt and pepper.
Heat a cast iron skillet of griddle over medium-heat until hot. Lightly oil the surface.
Place a tortilla down and immediately top with a beef ball. Use a spatula or burger press to smash the beef flat onto the tortilla. Press hard, it should be thin and stick it to the tortilla.
Cook 2-3 minutes until the beef if browned and crispy underneath. Flip and cook 1-2 minutes more until tortilla is golden and meat is cooked. Remove and keep warm. Repeat with remaining tacos.
Top each taco with a generous spoonful of the street corn mix. Drizzle with the sauce. Add extra cilantro, scallions, or feta cheese. Top with mixed salad.
