The Best Peanut Udon Noodles

Ingredients (serves 2):
2 packs fresh or frozen udon noodles
2 tbsp sesame oil
3 cloves garlic, minced
1 cup mushrooms, sliced (such as cremini or shiitake)
2 tbsp soy sauce
1 tbsp hoisin sauce (optional, for extra depth)
2 tbsp creamy peanut butter
½ cup coconut milk (or water for a lighter version)
1 tsp rice vinegar or lime juice
½ tsp chili flakes (optional, for heat)
1 tsp honey or maple syrup (optional, for balance)
Toppings:
1 tsp sesame seeds
Chopped green onions (optional)
Instructions:
Bring a pot of water to a boil and cook the udon noodles according to package instructions (typically 1–2 minutes for fresh udon). Drain and rinse under warm water to separate them. Set aside.
In a large pan over medium heat, warm the sesame oil. Add the minced garlic and sauté until fragrant (about 30 seconds). Toss in the sliced mushrooms and cook for 3–4 minutes until softened.
Stir in soy sauce, hoisin sauce, peanut butter, coconut milk, rice vinegar, and chili flakes. Mix until the peanut butter melts into a smooth, creamy sauce. Let it simmer for 2–3 minutes to thicken.
Add the cooked udon to the pan, tossing until evenly coated in the peanut sauce.Cook for another minute to let the flavors meld.
Remove from heat and sprinkle with sesame seeds and green onions if desired. Serve hot and enjoy!
